I've been looking at the the license for the Ship & Star, Upper East Smithfield, Wapping at the end of the 18th and early 19th century. *
The new St Katherines Docks in 1825 suggest that this public house disappears around 1800, and now under St Katherines Dock.
Coleman Shipman was a licensed victualler from 1785 (he was previously a cabinet maker). Born in Sudbury, Suffolk, May 1753.

London Land Tax Records (Source: Ancestry.co.uk) have him resident at East Smithfield from 1787-1792 & a St Thomas' Hospital admission register dated 20 March 1788 (Source: London Lives) shows his address as the Ship & Star, Upper East Smithfield. *
He was buried on 3 October 1793 at St John of Wapping at which time his address was still East Smithfield (Source: Burial register - Ancestry.co.uk). Probate was dated October 1793 (Source: Findmypast.co.uk), but I don't have any details.

William Rattray acquired the license on the Ship & Star when he married Coleman Shipman's widow Catherine Shipman nee Swaddell on 26 March 1795 (Source: Marriage register - Ancestry.co.uk). I have no knowledge of Rattray before this date. *

Will of William Rattray who died July 1840 is available to download free on the National Archive website under ref PROB-11-1931-251. It does not reference to the pub or any of his properties, but he left his entire estate to be shared equally between his 2 step-daughters (daughters of Coleman & Catherine Shipman), Elizabeth Putt nee Shipman & Phebe Rouse nee Shipman. *
