Jemima Bunce Symington (nee Cowee) was landlady of the Chequers from January 1889 onwards, the licence having been transferred to her from Joseph Watson at the Petty Sessions that month, and she was still publican there at the time of the 1901 census. *
She had retired from the business by 1911. Prior to her stint at the Chequers, she was landlady at the Ram on the High Street, Newport Pagnell, from roughly 1879 or so, until (presumably) December 1888. Her husband Charles was named as landlord of the Ram when Jemima applied for a protection order against him in February 1879, but as he appears to have been trading as a grocer from 10 Caldecote Street, Newport Pagnell during that time period, I suspect that Jemima was to all intents and purposes, the actual publican.

Jemima's uncle by marriage, Isaac Bunker, was publican of the Five Bells on Berkhamsted High Street, Hertfordshire, from around 1861 (she was then the barmaid there) until about 1866 or 1867, after which time one Josiah Bunn took over. *
